I love this recipe, especially for the cooler months. It is a good hearty breakfast to warm you up from the inside and full of all the good nutrients to support you through winter!

Garlic

Anti-microbial: Garlic is one of nature’s natural antibiotics! It is the Sulphur-based compounds found within garlic that is responsible for it’s actions. It has antibacterial and antiviral actions to rid the body of any cold or flu viruses. Garlic is also useful for treating those nasty upper respiratory tract infections.

Cholesterol: Garlic is beneficial for balancing cholesterol levels. It reduces LDL cholesterol (the bad guys), and increases the production of HDL cholesterol (the good guys).

Anti Inflammatory: Inflammation causes tissue damage within the body, and is associated with many disease and illnesses. Eating 1-2 cloves of garlic daily is a great way to boost your health and keep inflammation at bay.

Tip: Add garlic to meals within the last few minutes before severing to maintain all it’s health benefits.

 

Mushrooms

Mushrooms are an excellent source of fiber and B vitamins. They also contain iron, zinc, vitamin C and vitamin D. Mushrooms are an excellent protein source for vegetarians – plus they taste DELICIOUS!!!

Avocado

Vitamin E: Avocado’s are a great source of vitamin E, an important antioxidant. Oxidative stress causes damage to cells and tissue, increasing the risk of disease and the effects of aging. Vitamin E reduces oxidative damage and provides protection.

Ingredients (Serves 1)

1 medium sized field mushroom (wipe of any dirt with a paper towel)

1 egg

1 tsp. Organic butter

1 clove garlic, crushed

Few sprigs fresh thyme

Handful rocket

½ avocado

Squeeze of lime juice

Salt and Pepper to season

Instructions

  1. Preheat oven to 180 degrees, Place the mushroom on a tray lined with baking paper to prevent sticking.
  2. Combine crushed garlic and butter, mix together well
  3. Add the garlic butter to the mushroom, and spread over surface evenly.
  4. Crack 1 egg into the center of the mushroom, and season with fresh thyme leaves, salt and pepper.
  5. Bake for 15-20mins or until egg is cooked.
  6. Mash avocado and add a pinch of olive oil, salt and pepper to season. You can add this on top of the egg at the end or on the side.
  7. Season rocket with a drizzle of olive oil.
  8. Add the mushroom to the plate and enjoy your breakfast!
  9. As delicious as this breaky tastes…don’t forget to eat mindfully and chew your food well!
