I’m sure you will soon learn how much I love using spices in my recipes, especially during winter! Ginger is one of my favorites, not only does it increase blood circulation and provide anti-inflammatory actions – it also has amazing heating properties. My body doesn’t agree with the cold weather too much, so this is a great and delicious way to support it through winter.

These bite size treats are the  perfect healthy alternative when that 3pm slump hits, or enjoy them after dinner for a sweet treat. They are incredibly quick to make, so there’s no excuse that it takes too long!

This recipe will keep for around 2 weeks when stored in the fridge, or you can store them much longer in the freezer. It’s a fantastic snack to make and keep on hand when you have friends coming over at the last minute, or if you have a busy few weeks ahead of you.

 

Recipe

1 Cup Almond meal

1/4 cup cranberries, roughly chopped

1/4 cup pistachio’s, roughly chopped

1/4 cup pumpkin seeds

1/4 cup sesame seeds

1/4 cup honey or alternative natural sweetener

1/2 orange, juiced

1 small tsp orange zest

1/2 shredded coconut

2 tbsp coconut oil, melted

1/4 tsp ground ginger

1/2 tsp ground cardamon

Add all ingredients into a bowl (leave aside the orange juice) and mix well. Slowly add the orange juice until the mixture begins to stick together well. Roll into bite size balls and store in fridge or freezer. If you are short of time, or looking for a quick alternative – press mixture into a baking tray, and slice into small squares. They still taste just as good!
